XO Prawns

Ingredients

Olive oil

750g Skull Island Prawns, de-veined and butterflied

1 tbsp ginger, finely diced

4 cloves garlic, finely diced

1 tbsp Shaoxing wine

2 tbsp light soy

2 tbsp XO sauce

1 tbsp sugar

¼ cup chicken stock

Spring onions

Furikake (for garnish)

Method

1. In a grill pan, heat some oil and add the prawns shell side down. Cook for 4-5 minutes until the meat has started to turn opaque and set aside.

2. In a wok, heat some oil and fry the garlic and ginger until fragrant. Delgaze with Shaoxing. Add in the light soy, XO sauce, sugar and chicken stock. Simmer for a few minutes until thickened.

3. Add in the prawns, coat in sauce and serve immediately.

4. Garnish with spring onions, furikake and a drizzle of lemon.
