Sticky Date Pudding

Ingredients

340g pitted dates, pitted and chopped
2 tsp bicarb soda
2 cups water
125g butter
330g brown sugar
4 eggs, beaten
1 tsp vanilla extract
335g self-raising flour
Sauce
330g brown sugar
200ml cream
250g butter
Method

1. Preheat oven to 150 degrees Celsius. Grease and line a square or circular tin.
2. Put dates, bi-carb soda, water into saucepan and bring to boil. Simmer until dates break down. Turn off heat and let it cool.
3. Add butter in, stir until all combined. Add in brown sugar, eggs, vanilla. Fold in flour and stir.
4. Pour into tin, and bake for 1 hour until skewer comes out clean. Let it cool.
5. For the sauce, put all ingredients into a saucepan and bring to the boil, reduce the heat and simmer until golden. Prick the sticky date pudding all over.
6. To serve, drizzle the sauce all over making sure it seeps into all the holes that you’ve pricked into it. Serve with thick dollop cream too.
