Mini Quiche

Makes: 24 small quiches

Preparation time: 20 minutes

Cooking time: 30 minutes

Difficulty: Easy

Ingredients

3 medium zucchini, coarsely grated (squeeze water out)

2 carrots, coarsely grated

1 large onion, finely chopped (optional)

3 rashers bacon, finely chopped

1 cup self raising flour

½ cup olive oil

5 egg lightly beaten

1 cup grated mozzarella cheese

Salt and pepper, to taste

Fresh herbs to garnish (optional)

Method

1. Grease 2 deep, 12-hole patty pans.

2. Combine zucchini, onion, bacon, flour, oil, eggs, and cheese in a large bowl. Season with salt and pepper, mix well.

3. Divide mixture evenly in pan holes.

4. Cook in moderate oven, 180 degrees for about 25-30 minutes or until lightly browned.

Note: if using onion, slightly cook before mixing with the other ingredients so you don’t get the raw onion taste.
