Lemongrass Chicken Curry

Curry

Few sticks lemongrass
1 onion
3 cloves garlic
1 inch ginger
2 tsp tumeric
3 chillies
3 tbsp fish sauce
600g chicken breast
2 tomatoes
2 tbsp sugar
1 cup water
Coconut cream
Method

Blitz onion, garlic, ginger, tumeric, chillis or mortar and pestle.
Fry off paste in oil. Add lemongrass, fish sauce, chicken breast. Fry few mins. Add tomatoes and sugar.
Add water. Simmer till chicken tender. Balance with fish sauce and sugar. Stir through coconut cream at end.
Flatbreads

2 cups SR flour
1 ½ cups Greek yogurt
Generous pinch salt
Method

Mix ingredients together. Roll into balls. No need to rest. Roll out.
Fry in a dry pan.
