Fig Jam Drops

Ingredients

190g butter
170g caster sugar
2 egg yolks
1 tsp vanilla bean paste
230g plain flour
60g almond meal
½ tsp baking powder
200g fig jam



Method

Preheat oven to 150 degrees.
Beat butter, sugar, yolks, vanilla bean paste in a mixer until pale.
Add flour, almond meal and baking powder. Stir and combine.
Roll tablespoonful sized mixture into balls onto a lined baking tray. Using the back of a spoon, flatten slightly and make a indent.
Place a teaspoon of the spiced fig jam in the indent.
Bake for 30 minutes until golden. Set aside to cool.
