Coffee Buns

Yield: 14 buns at 75g each.

Dough

250g milk
40g water
7g dry yeast
480g bread flour
60g plain flour
60g sugar
2 eggs
60g butter, melted
Pinch salt

Topping
-----------
2 tbsp instant coffee
100g butter, softened
100g sugar, softened
2 eggs
100g plain flour

Method
-----------
Heat milk and water to lukewarm. Dissolve yeast and let sit until bubbly.
Mix together all other ingredients, knead for 10 mins until elastic and then cover and set aside until doubled in size.
Knock back after dough has risen. Divide into balls and flatten. Place a cube of butter into each ball and close up. Cover and set aside to rise again.
Prepare the topping. Dissolve coffee in just enough hot water (1 tbsp or so). Whisk ingredients together until smooth, and a pipeable consistency. Pipe in a circular fashion onto the top of the ball.
Bake at 175 degrees for 20 minutes.
