Blueberry Protein Muffins

Makes: 12 muffins

Preparation time: 15 minutes

Cooking time: 20 minutes

Ingredients

1 1/3 cup Gold Standard Whey (I used vanilla but you can substitute with any flavour you like)

1 1/3 cup whole wheat flour

2 tsp baking powder

½ tsp salt

1 cup Greek yogurt

1 cup apple sauce

2 eggs

4 tsp stevia glycerite (or 2/3 cup sugar)

2 tsp vanilla

2 cups blueberries (if using frozen, microwave to defrost and then drain off the water)

Method

1. Preheat oven to 200 degrees. Line 12 case muffin tin, or spray with cooking oil.

2. Combine the dry ingredients, flour, baking powder and salt.

3. Combine and whisk the wet ingredients, yogurt, apple sauce, eggs, stevia (or sugar) and vanilla until no lumps remain.

4. Fold the wet ingredients into the dry. You may need to whisk a little to remove any lumps. Then fold in the blueberries.

5. Fill the muffin tins and bake for 20 minutes or until a skewer inserted comes out clean.
