Beef Tartare

Ingredients

8 mini brioche rolls
250g good quality beef (fillet)
1/2 red onion, diced finely
1 tbsp chives, chopped finely
Sriracha
Black pepper
Sichuan pepper
Salt
Parmesan

Method
-----------
Toast brioche. Dice beef super finely. I actually prefer to scrape mine off and then dice.
Mix together all ingredients. Taste and season. Grate Parmesan on top.
