Miso Butter Corn

Yield: 4 corn cobs

Corn

4 corn cobs

Method
-----------
Microwave entire corn (in husks) in microwave for 4 minutes.
Cut end of corn and the husk should slide right off.
Corn is then ready for service, to be grilled with miso butter.

Miso Butter
-----------
100g butter
30g white miso paste
2 tsp togarashi chilli pepper
Zest of 1 lime

Method

Whisk all together until combined.

Garnishes
-----------
Sesame kewpie mayonnaise
Feta cheese
Mint
Coriander
Lime wedges

Method
-----------
When ready to service, grill the corn in miso butter. Drizzle with sesame mayonnaise.
Sprinkle with feta cheese on top.
Top with mint, coriander and lime juice.
