Fried Rice

Ingredients

2 cups of cooked rice (left in fridge overnight is best)

3 eggs, lightly whisked

150g bacon or spam

1 carrots, diced

1 cup peas, defrosted

1/2 onion, diced finely

3 cloves garlic, diced finely

3cm ginger, diced finely

2 tbsp Shaoxing

1 tbsp oyster sauce

1 tbsp dark soy

1 tbsp light soy

1 tbsp sesame oil

1/2 tsp white pepper

1/2 cup spring onion, sliced

Vegetable oil

 

Method

1.       In wok, heat some oil in the base. In two lots, add whisked eggs in and fry. Remove, dice and set aside.

2.       Next in the wok, add another tbsp of oil and then add in the onion, garlic, ginger and bacon (or spam). Saute until softened (approx. 3 minutes).

3.       Then add in the carrots and saute until softened.

4.       Add the rice in and then all of the sauces. Fry until all liquid has evaporated and edges of the rice begin to come crispy. Finally, add in the peas, spring onions and egg. Remove from heat and serve immediately.
